Ingredients:

  • 2 packs of instant ramen (discard seasoning packets)
  • 4 cups (950ml) chicken or vegetable broth
  • 2 tablespoons (30ml) soy sauce
  • 1 tablespoon (15g) miso paste (optional but recommended)
  • 1 tablespoon (15ml) sesame oil
  • 1 teaspoon (5g) chili flakes (adjust to taste)
  • 1 teaspoon (5g) grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon (15g) sriracha or gochujang (for extra spice)
  • 2 eggs
  • ½ cup (50g) mushrooms, sliced
  • ½ cup (50g) green onions, chopped
  • 1 teaspoon (5ml) rice vinegar
  • 1 teaspoon (5g) sugar
  • ½ cup (50g) bok choy or spinach
  • Sesame seeds and nori (optional, for garnish)

Instructions:

Prepare the broth – In a medium pot, heat sesame oil over medium heat. Add garlic, ginger, and chili flakes and sauté until fragrant (about 30 seconds).

Build the flavor – Add miso paste, soy sauce, sriracha, rice vinegar, sugar, and broth. Stir and bring to a simmer.

Cook the ramen – Add the noodles and cook as directed on package (3-4 minutes). Add mushrooms and bok choy during the final minute of cooking.

Poach the eggs – Fill another pot with water and let it simmer. Add a splash of vinegar. Stir the water and gently crack an egg into the center. Cook for 3-4 minutes until the whites have set but the yolk is still runny. Repeat with the second egg.

Set your bowl up – Divide the broth and ramen in two and portion into two separate bowls. Top each bowl with a poached egg, nori, sesame seeds, and green onions.
