I don’t know about you, but mornings and I aren’t always on the best terms. That’s why I keep this banana pancake recipe in my back pocket. It’s quick, uses ingredients I always have lying around, and makes me feel like I actually tried—even if I rolled out of bed ten minutes ago. These pancakes are soft, slightly sweet from the banana, and perfect with a little drizzle of syrup or a dollop of yogurt.

This isn’t some fancy brunch dish from a downtown café. This recipe actually has its roots in the classic American-style pancake but with a tropical twist. Bananas are commonly used in baking to replace sugar or fat, and here they do double duty: sweetener and flavor booster. It’s a great way to use up that lonely brown banana you swore you’d turn into banana bread two days ago.

You can keep it basic or dress it up. Sometimes I’ll toss in a handful of chocolate chips, or if I’m feeling grown-up, a dash of cinnamon. But even just as-is, it’s a five-minute fix to a hungry morning.

Ingredients needed for the Banana Pancakes:

  • 1 ripe banana (about 120 grams or 4.2 ounces)
  • 1 egg
  • 1/2 cup (60 grams) all-purpose flour
  • 1/2 cup (120 milliliters) milk
  • 1 teaspoon (4 grams) baking powder
  • Pinch of salt
  • Butter or oil for cooking

Instructions:

  1. In a bowl, mash the banana until smooth. Lumps are okay—this isn’t a science lab.
  2. Crack in the egg and whisk together.
  3. Add the flour, baking powder, salt, and milk. Stir until combined. Don’t overmix—just get everything incorporated.
  4. Heat a non-stick pan over medium heat. Add a little butter or oil.
  5. Pour in about 1/4 cup (60 ml) of batter for each pancake. Cook for 2–3 minutes, until bubbles form on the surface.
  6. Flip and cook the other side for another 2 minutes, until golden brown.
