Some days, you just want something warm and tasty, with lots of flavor.This vegetarian chili is exactly that, loaded with beans, veggies and spices, it’s the kind of meal that keeps you full and satisfied without much effort. Just for yourself, your entire family or a group of friends, this chili is a great go to.
Easy to make in one pot and ingredients are versatile, so you can use whatever you have on hand. Serve with rice, cornbread,or tortilla chips and top with your favorites like avocado, shredded cheese, or sour cream. And it’s even better the next day as leftovers.

Ingredients for PowerBowl Delight
2 tablespoons olive oil (30 ml) |
1 onion, diced |
3 cloves garlic, minced |
1 bell pepper, diced |
2 carrots, diced |
2 celery stalks, chopped |
1 zucchini, diced |
1 can (15 oz / 400 g) diced tomatoes |
1 can (15 oz / 400 g) black beans, drained and rinsed |
1 can (15 oz / 400 g) kidney beans, drained and rinsed |
1 can (15 oz / 400 g) corn, drained |
2 cups (480 ml) vegetable broth |
2 tablespoons tomato paste (30 g) |
1 tablespoon chili powder (15 g) |
1 teaspoon cumin (5 g) |
1 teaspoon smoked paprika (5 g) |
½ teaspoon salt (2.5 g) |
½ teaspoon black pepper (2.5 g) |
½ teaspoon dried oregano (2.5 g) |
½ teaspoon dried oregano (2.5 g) |
¼ teaspoon cayenne pepper (optional) |
Cooking Instructions for PowerBowl Delight
1. Fry the vegetables – Heat olive oil in a large pot on medium heat. Add diced onion, garlic and bell pepper. Cook for 3-5 minutes until soft. |
2. Add the ingredients – Stir in carrots,celery, and zucchini. Cook for another 5 minutes, stirring occasionally. |
3. Add seasonings – Add chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper if using. Stir well. |
4. Combine the beans and tomatoes – Pour in diced tomatoes, tomato paste, black beans, kidney beans, and corn. Stir until evenly mixed. |
5. Simmer the chili – Add vegetable broth, bring to a boil, then reduce heat to low. Cover and let simmer for ~30 minutes, stirring occasionally. |
6. Adjust and serve – Taste and adjust seasoning if needed. Serve hot. |

Storage and Serving for PowerBowl Delight
Storage – Refrigerate leftovers in an airtight container for up to 5 days. Frozen can last up to 3 months.
Reheating – Warm chili on the stovetop over medium heat, or in microwave oven
Serving idea – you can easily serve this meal over steamed rice, with crusty bread.
