This chicken soup recipe has been a go-to comfort food for generations. People have been making it for centuries because it’s simple, filling, and easy to adjust based on what’s available.
Many families have their own version, passed down from grandparents who made it with whatever they had on hand. Some add potatoes instead of noodles, others throw in extra herbs for more flavor. No matter the variation, the heart of the dish remains the same.
It’s the kind of meal that feels familiar, whether you’re feeling under the weather or just want something light and homemade.

Here’s a simple chicken soup recipe:
Chicken Soup Recipe Ingredients:
- 1 whole chicken (or about 4 pieces like thighs or drumsticks)
- 8 cups (2 liters) of water
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, chopped
- 3 garlic cloves, minced (optional)
- 1 bay leaf
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- A handful of fresh parsley, chopped
- 1 cup of noodles or rice (optional)
Instructions:
- Boil the Chicken – Put the chicken in a big pot and add the water. Bring it to a boil, then lower the heat and let it simmer for about 45 minutes. Skim off any foam that forms on top.
- Take Out the Chicken – Remove the chicken from the pot. Let it cool a bit, then shred the meat and set it aside. Throw away the bones.
- Cook the Vegetables – Add the carrots, celery, onion, garlic, bay leaf, salt, and pepper to the broth. Let it simmer for about 20 minutes.
- Add the Chicken Back – Put the shredded chicken back in the pot. If you’re using noodles or rice, add them now and cook until they’re soft (about 10 minutes for noodles, 15 for rice).
- Finish It Up – Remove the bay leaf, stir in the parsley, and adjust the salt and pepper if needed.
That’s it! Serve warm and enjoy.
